DIAMANTI A TAVOLA

Diamanti a Tavola is an annual truffle festival in Amandola.  Truffle hunts are led by the town’s tartufai and their trained dogs in the surrounding woods.  The white truffles, usually a cream or light brown colour with white marbling, are esteemed more than the black ones because of their flavour.  They are rare and as such, very expensive.  Whereas olive oil is used in preparations with black truffles, butter is usually used with white truffle food preparation.  The ultimate experience is tagliatelle with shaved white truffle and grated parmigiano reggiano cheese.  The food stands lining the streets of Amandola also offer other local specialties of the season: chestnuts, walnuts and mela rosa apples.
